Ingredients

  • 1 1/2 cups chicken broth
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • ground black pepper to taste
  • 2 1/2 pounds baking potatoes peeled, cut into wedges
  • paprika optional, to taste, for garnish
  • parsley leaves optional, to taste, for garnish

Directions

  • Preheat the oven to 350 degrees F.
  • In a 9×13-inch baking dish, add the chicken broth, the oil, the lemon juice, the garlic, the oregano, the salt, and the black pepper and stir to combine.
  • Add the potato wedges to the broth mixture and stir to coat.
  • Bake the seasoned potato wedges until the potatoes are fork-tender, about 1 hour 30 minutes-1 hour 45 minutes.
  • Transfer the baking dish to a wire rack and let the seasoned potato wedges rest, about 10 minutes.
  • Serve the seasoned potato wedges garnished with the paprika and the parsley.
